Technical Description:
The PLM unit has been designed to obtain a product with a regular section. It is therefore ideal for fitting to automatic slicing lines. The machine features special stainless-steel moulds, ready for connection to a glycol cooling circuit. Due to the considerable pressure placed on the meat, mould cooling prevents the fatty parts of the product with low melting point from depositing on the mould, therefore curbing weight drop and any chance of polluting pieces subsequently introduced. The product loading/unloading area is protected by a PHOTOELECTRIC SAFETY BARRIER that only operates in the case of dangerous movements. The ELECTRICAL AND HYDRAULIC CIRCUITS, for controlling the above movements, feature high safety standards, being equipped with double component parts (monitored wherever necessary) that are cyclically checked. The moulds are made to obtain sections with customized shapes and are built so that the moving parts can be easily dismantled for complete cleaning.

Technical Description:
This machine is particularly suitable for raw hams due to its concave upper rollers which facilitate partial cleansing of the large blood vessels. The machine is provided of a series of devices in order that the machine can be used: • As a “vein-squeezer”, with raw product before salting phase. Thanks to a special device, the lower belt works as conveyor belt only while the upper rollers operate on the upper part of the product to remove blood from the veins; • As “massager-vein squeezer” between the first and the second salt and during desalting before the resting phase of the ham.
